What would a children's birthday be without a birthday cake. The light in the children's eyes when the cake decorated with candles is brought in is indescribable. When the cake is cut, the surprise is great. Colorful layers in iridescent rainbow colors come to the fore.

A rainbow cake, also known by the English name rainbow cake, is the ideal children's cake. It can be easily baked using the following recipe. The recipe is uncomplicated. Baking takes some time as the different colored bases are baked one at a time. If you own a convection oven, you can save time and bake several bases at the same time.

The children's cake is filled with a white cream and coated on the outside. This makes the rainbow colors appear even more intense. It should be noted that the cake must be baked a day before assembly. The chocolate cream should also be started a day before decorating. It will be completed on the second day.

The ingredients mentioned here are sufficient for six cake bases with a diameter of 18 cm.

Biscuit Dough

  • 8 eggs
  • 8 tablespoons hot water
  • 350 grams of sugar
  • 200 grams of flour
  • 200 g cornstarch
  • 1 pinch of salt
  • 2 packets of vanilla sugar
  • 1 packet of baking powder
  • food coloring (gel colors)

Chocolate cream for filling and spreading

  • 600 grams of cream
  • 250g white chocolate

If desired, the underside of the cake bases can be spread with jam.

Rainbow cake preparation

Separate the eggs, beat the egg whites with a pinch of salt and set aside. Mix the egg yolk with the hot water and beat until fluffy. Gradually add the sugar and vanilla sugar to the egg yolk, stirring constantly, until the mixture is creamy. Now put the beaten egg white on top, but do not fold in yet. In a separate bowl, mix flour, cornstarch, and baking powder.

The flour mixture is now sieved over the beaten egg whites. The beaten egg white and flour are now carefully folded in. The finished dough is divided into 6 bowls. A little of one color is added to each bowl and mixed until the desired shade is achieved. If not all shades are available, orange can be mixed from red and yellow. Purple comes from mixing red and blue.

Line a springform pan or several with baking paper. You can cut the parchment paper to the size of a springform pan and a wide strip of parchment paper for the edge of the pan. If the mold is lightly oiled beforehand, the baking paper will stick and will not slip when filling in the dough. Now the dough can be put into the molds and baked at 180 °C for 10 to 12 minutes in a preheated oven. A temperature of 160 °C is sufficient for circulating air.

Allow the bases to cool thoroughly before assembling. Baking often creates a bulge in the middle of the bottom. If you want the cake to be perfect, the top can be leveled with a knife.

For the chocolate cream, heat but do not boil 400 g of cream. Add the chocolate pieces and mix thoroughly. When all the chocolate chips have dissolved, the covered cream is placed in the fridge to cool. The next day, the remaining cream is whipped until stiff and carefully stirred into the already cooled cream mixture.

When assembling, the top of the cake base is coated with cream. If desired, the underside of the floors can be spread with jam from the second layer onwards before putting them on. When assembling, the order of the colors (red, orange, yellow, green, blue, purple) must be observed. The outside of the cake is then coated with cream and left to cool.

The cake is only decorated shortly before serving so that the colors of the decoration do not run. Smarties or colorful sugar pearls are suitable for decoration. But you can also conjure up pretty decorations with colorful marzipan or fondant. It makes sense to choose a pattern in rainbow colors for the decoration as well.

When using Smarties, the pattern can be tried out on a mat beforehand to ensure there are enough Smarties in the required colors. Now the party can begin. Your guests will be delighted by the Rainbow.
