Everyone loves coconut macaroons and the best news is, they are easy to make. So if you happen to have a lot of protein left over after a long cookie-making session or you just feel like having the wonderfully light pastry for in between, get started.

You need these ingredients

Even if you are a real baking beginner, you can try coconut macaroons, because this is an easy recipe that is also suitable for baking beginners. All you need is a large pot, two small spoons and about 10 minutes of your time, and you can surprise your loved ones with this delicacy.

You also need the following ingredients for 30 pieces:

  • 200 g grated coconut
  • 200 grams of powdered sugar
  • 4 egg whites
  • 1 pinch of cinnamon
  • 30 – 35 wafers (optional)
  • 150 g dark couverture or another chocolate of your choice

If you have all these things at home, you can start baking and you will soon realize how easy it can be to prepare this fluffy pastry.

The preparation – explained step by step

Step 1

First, add all the ingredients (apart from the chocolate and wafers) to the pot provided. Now heat the mass while stirring constantly. This is particularly important because the ingredients must never be heated above 50 °C.

You can easily keep an eye on the temperature by using a kitchen thermometer. If you don't have one, just use the back of your hand to help. If you can still touch the dough without burning yourself, the perfect temperature has been reached. The temperature is so important because otherwise it can happen very quickly that the egg white sets and you can no longer use the mixture.

You will now notice while stirring how the mass becomes more and more uniform and finally gets a consistency similar to paste. If it also sticks to the spoon and no longer crumbles, the dough is ready for your delicious treat. Now the icing sugar has liquefied and thanks to the egg white, a homogeneous unit has emerged that is just waiting to be turned into cookies and then baked.

If you have decided to use wafers, spread them out on a baking sheet before you put the dough on top. But be careful: the wafers can slip very easily. So that this is not the case, it is best to simply moisten the baking paper with a little water. Now simply spread the batter on the surface using two teaspoons and then slide the tray into the preheated oven.

The whole thing should bake for about 20 minutes at 150 °C. Afterwards you have to let the little delicacies cool down a bit and then you can start feasting.
If you have a piping bag at home, you can easily fill the finished dough into it before you put the chestnuts on the wafers.
