Whether it's for a child's birthday party or a visit to relatives, pastries and sweets are always popular. There are countless baking books and the Internet is also an excellent place to try out new creations. You are also welcome to experiment with colors.

Brightly colored biscuit roll

This biscuit roll impresses with its bright colors and delicious taste. It is ideal for seeing beaming faces at a children's birthday party. But it is also ideal for coffee and cake in the afternoon with the parents.

The brightly colored Swiss roll is relatively easy to bake and can therefore also be tried out by baking beginners. So that you can finally start baking, here is the recipe for this wonderfully moist Swiss roll.

Ingredients for the biscuit dough

  • 5 egg whites
  • 5 egg yolks
  • 150 grams of sugar
  • Zest and juice of an untreated lemon (preferably organic)
  • 80 grams of flour
  • 1 pinch of salt
  • 1 teaspoon Baking powder
  • 40 g melted butter (please make sure the butter is not hot when you add it to the dough)
  • food coloring – Make sure that the food coloring is of good quality, otherwise the colors may fade completely or simply disappear during baking.

  • 1 cup (200 ml) cold whipping cream
  • 200 g low-fat quark
  • 1 packet of vanilla sugar
  • 3-4 tbsp sugar

Later you will also need a piping bag and a damp kitchen towel to roll up the sponge cake. You can already arrange these things for yourself.

Preparation of the rainbow Swiss roll

You start by preparing the biscuit dough. For this, the two egg yolks (please do not use them straight from the fridge. The eggs should be at room temperature) are whipped with the sugar and the lemon zest and the lemon juice. Beat this mass until you get a slightly lighter, viscous dough.

In the next step, mix the flour thoroughly with the baking powder.

Once you have melted the butter and let it cool down a bit, you can add it to the egg mixture along with the flour and baking powder mixture. Mix the two ingredients together until you get a homogeneous dough.

So that the dough is really fluffy, you now beat the egg whites to whipped cream. Then carefully fold it under the dough. This works best with a spatula.

Once all of this is done, start by dividing the dough into 6 equal-sized bowls. This step is necessary so that the dough can be colored. To divide the dough accurately, you can weigh it beforehand and then divide the total by six.

You can now color your dough pieces to your heart's content. Then you put them in one piping bag and just tie it up at the top.

To get a nice pattern, pipe the dough onto a baking sheet lined with baking paper. You can let your creativity run free and try out different patterns.

Bake

Then you bake the whole thing at 190 degrees for about 10 - 12 minutes.

When the baking time is up, you can use a damp kitchen towel to turn the sponge cake out onto it. If the dough is then on the moistened cloth, you can slowly and carefully remove the baking paper. To shape the sponge cake and prevent it from drying out, simply roll it up in this moistened kitchen towel. Now you can just wait until the dough has cooled down.

In the meantime, you can take care of the delicious filling.

In the first step, whip the cool cream until stiff. Mix the low-fat quark with sugar and vanilla sugar. You can then carefully fold the whipped cream into the low-fat quark.

When the biscuit has cooled down, you can roll it up out of the kitchen towel. As soon as the dough is spread out in front of you, spread the cream and quark mixture over the entire surface.

You can then use the kitchen towel to roll the dough back into a roll. Be careful not to roll the sponge cake too tightly or the filling will ooze out of the sides.

Your rainbow biscuit roll is ready!

If you are already a bit more experienced in baking, the filling can of course also be modified. You can be creative here and spread the sponge roll with strawberries and cream, chocolate cream or a fruit mix, for example. Here you have no limits. If you would like to decorate the sponge roll from above, you can put small blobs of cream on the roll and then press fresh strawberries into them, for example.
